Method
Prepare the Ranchero Sauce
Add Tomatoes
Stir in the diced tomatoes and season with salt and pepper. Cook for 5-7 minutes until the mixture thickens slightly. Remove from heat and stir in chopped cilantro.
Cook the Chorizo and Beans
Cook Chorizo
In a separate pan, cook the chorizo over medium-high heat until browned and fully cooked, about 5-7 minutes. Drain excess fat if necessary.
Combine Beans
Add black beans to the cooked chorizo and heat through, about 2-3 minutes. Set aside.
Prepare the Cheese Sauce
Cook the Eggs
Fry the Eggs
In a non-stick skillet, cook the eggs sunny side up until the whites are set and the yolks are still runny, about 3-4 minutes.
Assemble the Dish
Prepare Tortillas
In a separate pan, lightly toast the flour tortillas until crispy on both sides.
Layer Ingredients
On each tortilla, layer a portion of the chorizo and black beans mixture, then spoon over the ranchero sauce, followed by a drizzle of cheese sauce.
Add Eggs and Garnish
Top with a sunny side up egg, crumbled cotija cheese, diced jalapeños, and diced tomatoes. Serve immediately.
