Preparation of Lobster Filling

Cook the Lobster
If using raw lobster, steam or boil the lobster until cooked through, about 8-10 minutes. Allow to cool, then remove the meat from the shells and chop into bite-sized pieces.

Prepare the Creamed Corn
In a small saucepan over medium heat, melt the butter. Add the creamed corn, chili powder, and chopped lobster meat. Stir to combine and cook for 3-4 minutes until heated through.

Add Cotija and Jalapeños
Remove the saucepan from heat and fold in the cotija cheese and sliced jalapeños. Adjust seasoning with salt and pepper if desired.
Assemble the Rolls

Toast the Buns (Optional)
If desired, toast the hot dog buns in a skillet or oven until lightly golden.

Fill the Rolls
Spoon the lobster filling generously into each hot dog bun.

Serve
Serve the elote lobster rolls immediately, garnished with additional cotija cheese and sliced jalapeños, if desired.
