Make the Crepe Batter
In a large mixing bowl, whisk together the flour, cocoa powder, sugar, and salt until well combined. In another bowl, whisk the eggs and milk together. Gradually pour the wet ingredients into the dry ingredients, stirring until smooth. Mix in the melted butter until well incorporated.

Cook the Crepes
Heat a non-stick skillet over medium heat. Pour about 1/4 cup of the batter into the skillet and swirl to evenly coat the bottom. Cook for about 2 minutes or until the edges begin to lift and the bottom is set. Flip and cook for an additional minute. Remove from the skillet and repeat with the remaining batter, stacking the crepes on a plate.
Whipped Cream

Prepare the Whipped Cream
In a large mixing bowl, combine the heavy whipping cream, powdered sugar, and vanilla extract. Using a hand mixer or stand mixer, whip the cream on medium-high speed until soft peaks form. Do not overwhip.
Chocolate Ganache

Make the Ganache
In a small saucepan, heat the heavy cream over medium heat until just simmering. Remove from heat and add the chocolate chips. Let sit for 1-2 minutes, then stir until smooth and glossy. Allow to cool slightly.
Strawberry Drizzle

Prepare the Strawberry Drizzle
In a small saucepan, combine the strawberries, sugar, and water. Heat over medium heat until the strawberries break down and the mixture thickens, about 5-7 minutes. Strain the mixture to remove seeds if desired.
Assembly

Assemble the Crepe Cake
Place one crepe on a serving platter and spread a layer of whipped cream on top. Repeat with the remaining crepes, stacking them with whipped cream in between each layer. Once all crepes are stacked, pour the chocolate ganache over the top, allowing it to drip down the sides. Finally, drizzle the strawberry sauce over the ganache for a decorative finish.
