Cook the Ribeye
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sliced ribeye, season with salt, black pepper, and garlic powder. Cook for about 4-5 minutes, stirring frequently, until the meat is browned and cooked through. Remove from the skillet and set aside.

In the same skillet, add the remaining tablespoon of olive oil. Add the sliced bell pepper and onion. Sauté for about 3-4 minutes until they are tender and slightly caramelized.

Combine Meat and Vegetables
Return the cooked ribeye to the skillet with the sautéed vegetables. Stir to combine and heat through for an additional 1-2 minutes.

Place the American cheese slices over the ribeye and vegetable mixture, cover the skillet, and let it cook for about 1-2 minutes until the cheese is melted.

Slice the hoagie rolls in half lengthwise. You can optionally toast them in the oven for a few minutes for added crunch.
