Prepare the Onions
Peel the onions and slice them into 1/4-inch thick rings. Separate the rings and set them aside.

Make the Batter
In a large bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually add the beer (or sparkling water) to the dry ingredients, stirring until just combined. The batter should be thick but pourable.

Heat the Oil
In a deep pot or fryer, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

Dip and Fry
Working in batches, dip the onion rings into the batter, allowing any excess to drip off. Carefully place them in the hot oil and fry for 2-3 minutes or until golden brown. Remove the rings with a slotted spoon and drain on paper towels.

Serve the onion rings hot with your favorite dipping sauce.
