Prepare the Rub

In a bowl, mix together smoked paprika, brown sugar, garlic powder, onion powder, cayenne pepper, salt, and black pepper.

Season the Pork

Rub the spice mixture all over the pork shoulder, ensuring it's well coated. Let it sit for at least 1 hour, preferably overnight in the refrigerator.

Smoke the Pork

Preheat your smoker to 225°F (107°C). Place the pork shoulder in the smoker, and smoke for about 8-10 hours, or until the internal temperature reaches 195°F (90°C).

Prepare the Sauce

Once the pork is done, mix apple cider vinegar and water in a bowl. Shred the pork using two forks and toss it with the vinegar mixture.

Serve

Toast the hamburger buns if requested. Pile the smoked pulled pork onto the buns, drizzle with barbecue sauce, and top with pickles. Serve with chips on the side.
