Make the Cheese Sauce
In a saucepan over medium heat, melt the butter. Add the flour and whisk for about 1 minute until combined. Gradually add the milk, whisking continuously until the mixture thickens. Stir in the cheddar and Monterey Jack cheese until melted and smooth. Season with salt and pepper to taste.

Prepare the Nachos
Preheat your oven to 350°F (175°C). On a large baking sheet, spread out the tortilla chips in an even layer. Top with the pulled pork, jalapenos, and cheese sauce.

Drizzle the mild BBQ sauce over the nacho toppings evenly.
