    Bake the Potatoes

    Preheat your oven to 425°F (220°C). Wash and scrub the potatoes thoroughly. Prick each potato several times with a fork, then rub them with a little olive oil and sprinkle with salt. Place the potatoes directly on the oven rack and bake for 45-60 minutes or until tender when pierced with a fork.

    Prepare the Smoked Meat

    While the potatoes are baking, prepare your choice of smoked meat. If using brisket or pulled pork, warm it in a saucepan over low heat until heated through. For sausage, slice it and heat it in a skillet until browned.

    Assemble the Baked Potatoes

    Once the potatoes are done, remove them from the oven and let them cool slightly. Cut a slit down the center of each potato and gently squeeze the ends to open them up. Add a tablespoon of butter to each potato, then top generously with your choice of smoked meat.

    Add Toppings

    Spoon sour cream over the meat, and sprinkle with chopped green onions. Season with additional salt and pepper to taste.
