    Prepare the Vegetables

    Slice the bell peppers and onion into thin strips.

    Sauté the Vegetables

    In a skillet, heat olive oil over medium heat. Add the sliced peppers and onions, sautéing until soft and slightly caramelized, about 5-7 minutes. Season with salt and pepper.

    Toast the Bread

    While the vegetables are cooking, toast the Texas toast in a separate pan or toaster until golden brown.

    Assemble the Sandwich

    On one slice of toasted Texas toast, layer the smoked sliced pork, sautéed peppers and onions, and top with Swiss cheese. Place another slice of Texas toast on top.

    Melt the Cheese

    Return the sandwich to the skillet and cook over low heat, pressing down gently to help the cheese melt, for about 3-5 minutes on each side.

    Serve

    Once the cheese is melted and the sandwich is golden brown, remove from heat, slice in half, and serve warm.
