Prepare the Chicken
Preheat your smoker or grill to 250°F (120°C). In a small bowl, mix together smoked paprika, garlic powder, onion powder, salt, and black pepper to create a rub.

Season the Chicken
Pat the chicken dry with paper towels. Rub olive oil all over the chicken, then generously apply the spice rub, making sure to cover all areas, including under the skin.

Prepare the Sides
While the chicken is smoking, prepare your desired sides (e.g., coleslaw, baked beans, corn on the cob, etc.).

Toast the Texas Toast
In the last 10 minutes of cooking, place the Texas toast on the grill or in a toaster until golden brown.

Serve
Once the chicken is cooked, remove it from the smoker and let it rest for 10 minutes before carving it in half. Serve half of the chicken alongside your two sides and Texas toast.
