Preparation

    Prepare the Rice Filling

    In a medium saucepan, combine the long-grain rice with 2 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until rice is tender and water is absorbed. Remove from heat and let it cool slightly.

    Mix the Filling

    In a large mixing bowl, add the cooked rice, ground beef (or lentils for the vegetarian option), chopped onion, parsley, dill, lemon juice, salt, and black pepper. Mix thoroughly until all ingredients are well combined.

    Prepare Grape Leaves

    Carefully remove grape leaves from the jar, rinse them under cold water, and pat them dry. Lay each leaf flat on a clean surface with the stem facing you.

    Stuff the Grape Leaves

    Place about 1-2 tablespoons of the filling at the base of each grape leaf. Fold the sides over the filling and roll tightly from the base up to the tip, forming a neat package. Repeat until all filling is used.

    Cook the Stuffed Grape Leaves

    In a large pot, layer any leftover grape leaves on the bottom to prevent sticking. Place the stuffed grape leaves seam side down in a single layer in the pot. Drizzle with olive oil and pour tomato sauce on top. Add enough water to cover the grape leaves, then cover the pot with a lid.

    Simmer

    Bring to a gentle simmer over medium heat, then reduce to low and cook for about 45-50 minutes, until the grape leaves are tender and the filling is cooked through.

    Serve

    Carefully remove the stuffed grape leaves from the pot and serve over a bed of rice. Drizzle with avgolemono or lamb-tomato sauce as desired.
