In a large bowl, combine olive oil, lemon juice, minced garlic cloves, ground cumin, paprika, salt, and black pepper. Stir well to mix all the ingredients.

Cut the chicken breast into 1-inch cubes. Add the chicken pieces to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours for better flavor.

While the chicken is marinating, chop the red and green bell peppers and red onion into 1-inch pieces.

Soak the skewers in water for at least 15 minutes if using wooden skewers. Thread the marinated chicken, red bell pepper, green bell pepper, and red onion onto the skewers, alternating between chicken and vegetables.

Preheat a grill or grill pan over medium-high heat. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
