Preparation of Cod

Preheat the Broiler
Preheat your oven's broiler to high heat. Make sure the broiler rack is positioned about 6 inches from the heating element.

Prepare the Cod
Rinse the cod fillets under cold water and pat them dry with paper towels. Place them on a baking sheet lined with aluminum foil for easy cleanup.

Season the Cod
In a small bowl, mix together olive oil, lemon juice, garlic powder, paprika, salt, and black pepper. Brush this mixture evenly over the cod fillets.

Broil the Cod
Place the baking sheet with the seasoned cod under the broiler. Broil for about 8-10 minutes or until the fish flakes easily with a fork and is cooked through.

Cook the Rice or Potatoes
If using rice, cook according to package instructions. For potatoes, peel and cut them into chunks, then boil in salted water until tender, about 15-20 minutes.

Prepare the Vegetable
While the cod is broiling, steam or sauté your chosen vegetable in a pan with 1 tablespoon of butter and a pinch of salt until tender, about 5-7 minutes.

If using potatoes, drain them and return to the pot. Add 1 tablespoon of butter and mash or leave them chunky as desired. Season with salt to taste.
