Prepare Eggplants
Slice the eggplants into 1 cm thick rounds. Sprinkle with salt and let them sit for 30 minutes to remove excess moisture. Rinse and pat dry.

Cook Meat Mixture
In a large skillet, heat olive oil over medium heat. Sauté chopped onion and minced garlic until soft. Add ground beef, cook until browned. Stir in tomato paste, cinnamon, nutmeg, salt, and pepper. Simmer for about 15 minutes.

Prepare Potatoes
Peel and slice the potatoes thinly. Parboil them in salted water for about 5 minutes, then drain.

Layer Moussaka
In a baking dish, layer the potatoes, followed by the eggplants, and then the meat mixture. Pour the béchamel sauce over the top and sprinkle with grated cheese.

Preheat the oven to 180°C (350°F) and bake for 45-50 minutes until golden brown. Let it cool for 10 minutes before serving.

Mix Filling
In a bowl, combine cooked spinach, crumbled feta cheese, beaten eggs, salt, and pepper. Mix well.

Bake Spinach Pie
Preheat the oven to 180°C (350°F) and bake for 30-35 minutes until golden brown. Let cool slightly before serving.

Cook Pasta
Cook pasta according to package instructions until al dente. Drain and set aside.

Layer Pastitsio
In a large baking dish, layer half of the pasta, followed by the meat sauce, and then the remaining pasta. Pour béchamel sauce on top and sprinkle with grated cheese.

Bake Pastitsio
Preheat the oven to 180°C (350°F) and bake for 45-50 minutes until bubbly and golden on top. Let it cool for 10 minutes before serving.
