Method

Moussaka

  1. 1

    Prepare Eggplants

Slice the eggplants into 1 cm thick rounds. Sprinkle with salt and let them sit for 30 minutes to remove excess moisture. Rinse and pat dry.

  2. 2

    Cook Meat Mixture

In a large skillet, heat olive oil over medium heat. Sauté chopped onion and minced garlic until soft. Add ground beef, cook until browned. Stir in tomato paste, cinnamon, nutmeg, salt, and pepper. Simmer for about 15 minutes.

  3. 3

    Prepare Potatoes

Peel and slice the potatoes thinly. Parboil them in salted water for about 5 minutes, then drain.

  4. 4

    Layer Moussaka

In a baking dish, layer the potatoes, followed by the eggplants, and then the meat mixture. Pour the béchamel sauce over the top and sprinkle with grated cheese.

  5. 5

    Bake

Preheat the oven to 180°C (350°F) and bake for 45-50 minutes until golden brown. Let it cool for 10 minutes before serving.

Spinach Pie

  1. 6

    Prepare Spinach

Wash and chop the spinach. Sauté chopped onion in olive oil until translucent. Add spinach and cook until wilted. Let it cool.

  2. 7

    Mix Filling

In a bowl, combine cooked spinach, crumbled feta cheese, beaten eggs, salt, and pepper. Mix well.

  3. 8

    Assemble Pie

Layer half of the phyllo pastry sheets in a greased baking dish, brushing each sheet with olive oil. Spread the spinach mixture evenly and cover with the remaining phyllo sheets, brushing each with oil.

  4. 9

    Bake Spinach Pie

Preheat the oven to 180°C (350°F) and bake for 30-35 minutes until golden brown. Let cool slightly before serving.
