    Prepare the Meat

    Choose your meat (beef, lamb, or chicken) and season it with salt, pepper, and oregano. Grill or pan-fry until cooked through, about 10-15 minutes for chicken and 15-20 minutes for beef or lamb.

    Make the Moussaka

    Slice the eggplant and potatoes into thin rounds. Sprinkle with salt and let sit for 30 minutes to draw out moisture. Rinse and pat dry. In a pan, heat olive oil and fry the eggplant and potatoes until golden brown. In a separate pan, sauté chopped onion and minced garlic in olive oil, add the ground meat, and cook until browned. Add tomato sauce and let simmer for 10 minutes. In a baking dish, layer the potatoes, eggplant, and meat sauce. Top with béchamel sauce, breadcrumbs, and grated cheese. Bake at 180°C (350°F) for 45 minutes.

    Prepare the Spinach Pie

    Sauté spinach with olive oil, add crumbled feta cheese, and season with salt and pepper. Place the mixture in phyllo pastry sheets and fold into triangles. Brush with olive oil and bake at 200°C (400°F) for 20 minutes until golden.

    Prepare the Dolmades

    Rinse grape leaves and fill each with a mixture of cooked rice, minced meat, salt, pepper, and a drizzle of olive oil. Roll tightly and place in a pot. Add water to cover and simmer for 30 minutes until leaves are tender.

    Cook the Rice and Vegetables

    In a pot, bring water to a boil, add rice, and cook according to package instructions. In the last few minutes of cooking, add mixed vegetables to the rice.
