    Prepare the Ingredients

    Wash the fresh spinach thoroughly under cold water and chop it coarsely. Peel and finely chop the onion.

    Sauté the Vegetables

    In a non-stick skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until it becomes translucent. Add the chopped spinach and continue to sauté for 2-3 more minutes until the spinach wilts. Season with salt and black pepper. Remove the skillet from heat and set aside.

    Whisk the Eggs

    In a mixing bowl, crack the eggs and whisk them until they are fully combined. Add a pinch of salt and black pepper to taste.

    Cook the Omelette

    Return the skillet to medium-low heat. Pour the whisked eggs into the skillet, ensuring they are evenly distributed. Allow the eggs to cook for about 2-3 minutes until the edges start to set.

    Add Filling and Fold

    Once the eggs are mostly set, carefully add the sautéed spinach and onion mixture evenly over one half of the omelette. Crumble the feta cheese on top of the filling. Using a spatula, gently fold the other half of the omelette over the filling and cook for an additional 1-2 minutes until the cheese starts to melt and the eggs are fully cooked.

    Slide the omelette onto a plate and cut it in half if desired. Serve warm and enjoy!
