Prepare the Spinach
Wash the fresh spinach thoroughly and chop it coarsely. Squeeze out excess water and set aside.

Combine Filling Ingredients
In a large mixing bowl, combine the sautéed onion and garlic with the chopped spinach, crumbled feta cheese, dill, beaten egg, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

Prepare the Filo Pastry
Preheat the oven to 180°C (350°F). Lay out the filo pastry sheets on a clean, dry surface. Keep the sheets covered with a damp cloth to prevent them from drying out.

Add the Filling
Place a row of the filling mixture along one edge of the layered filo, leaving a small border. Roll the pastry tightly to form a log, tucking in the sides as you go.

Bake the Spanakoteropeta
Transfer the rolled spanakoteropeta to a baking sheet lined with parchment paper. Brush the top with more melted butter. Bake in the preheated oven for 25-30 minutes or until golden brown and crisp.
