Method
Cooking the Pasta

Boil the macaroni
In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.
Preparing the Meat Sauce

Sauté onions and garlic
In a large skillet, heat olive oil over medium heat. Add chopped onions and minced garlic. Sauté until the onions are translucent.

Cook the ground beef
Add the ground beef to the skillet. Cook until browned, breaking it apart with a spoon as it cooks.

Add tomatoes and spices
Stir in the tomato paste, diced tomatoes, cinnamon, nutmeg, salt, and black pepper. Simmer for about 15 minutes until the sauce thickens.
Making the Béchamel Sauce

Add milk
Gradually whisk in the milk, continuing to stir until the mixture thickens and is smooth. This should take about 5 minutes.

Incorporate eggs and cheese
Remove from heat and let cool slightly. Whisk in the eggs and salt until fully combined. Stir in the grated Parmesan cheese.
Assembling and Baking

Combine pasta and meat sauce
In a large bowl, mix the cooked macaroni with the meat sauce until evenly coated.

Layer the pastitsio
In a greased baking dish, layer half of the macaroni and meat mixture. Pour half of the béchamel sauce over it. Add the remaining macaroni and top with the rest of the béchamel sauce.

Bake
Preheat the oven to 350°F (175°C). Bake the pastitsio for 30-40 minutes until the top is golden brown. Let it cool for 10 minutes before serving.
