Prepare the Marinade
In a small bowl, mix together the minced garlic, chopped rosemary, thyme, olive oil, salt, black pepper, and lemon juice to create a marinade.

Marinate the Lamb
Rub the marinade all over the leg of lamb, ensuring it is well coated. Cover with plastic wrap and let it marinate in the refrigerator for at least 2 hours, preferably overnight.

Preheat your oven to 350°F (175°C) while the lamb is marinating.

Roast the Lamb
Place the marinated leg of lamb in a roasting pan. Roast in the preheated oven for approximately 1.5 to 2 hours, or until the internal temperature reaches 145°F (63°C) for medium-rare.

Remove the leg of lamb from the oven and let it rest for at least 15 minutes before carving to allow the juices to redistribute.
