    Prepare the Fish

    Rinse the lake perch fillets under cold water and pat them dry with paper towels. Season both sides with salt and black pepper.

    Set Up Breading Station

    In three separate shallow dishes, place the flour in the first dish, whisk the eggs in the second dish, and place the breadcrumbs in the third dish.

    Bread the Fish

    Dredge each fillet in flour, shaking off the excess. Dip it into the beaten eggs, allowing the excess to drip off, then coat it with breadcrumbs, pressing lightly to adhere.

    Pan Fry the Fish

    In a large skillet, melt 2 tablespoons of butter over medium heat. Once hot, add the breaded lake perch fillets. Cook for about 3-4 minutes on each side or until golden brown and cooked through. Remove from the skillet and keep warm.

    Make the Lemon Butter Sauce

    In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add lemon juice and capers. Stir to combine and let simmer for 1-2 minutes.

    Serve

    Place the fried lake perch on a plate, drizzle with the lemon butter sauce, and garnish with fresh parsley. Serve with your choice of starch and vegetable.
