    Prepare the Potatoes

    Wash and peel the large potatoes. Cut them into long strips to create fries.

    Soak the Fries

    Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

    Make the Batter

    In a large bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer or sparkling water until the batter is smooth and thick.

    Heat the Oil

    In a deep frying pan or a pot, heat the vegetable oil to 350°F (175°C). You can test the oil by dropping a small amount of batter into it; if it sizzles and rises, the oil is ready.

    Fry the Potatoes

    Drain the soaked potatoes and pat them dry with a paper towel. Fry the potatoes in the hot oil in batches until they are golden and crispy, about 5-7 minutes. Remove them with a slotted spoon and drain on paper towels. Season with salt.

    Fry the Cod

    Dip each cod fillet into the batter, allowing excess to drip off. Carefully place the battered fish into the hot oil and fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

    Plate the hot fries and fish. Serve immediately with your favorite dipping sauce.
