Directions
- 1
Prepare the Salmon
Preheat the broiler to high. Pat the salmon filets dry with paper towels and place them on a baking sheet lined with parchment paper.
- 2
Marinate the Salmon
In a small bowl, mix together the olive oil, lemon juice, minced garlic, salt, black pepper, and paprika. Brush this mixture over the salmon filets evenly.
- 3
Broil the Salmon
Place the baking sheet under the broiler and cook for 6-8 minutes, or until the salmon is cooked through and flakes easily with a fork.
- 4
Prepare the Spinach and Feta Filling
In a large skillet over medium heat, add the fresh spinach and sauté until wilted, about 2-3 minutes. Remove from heat, and stir in the crumbled feta cheese and chopped dill.

- 6
Add Filling and Fold
Place a portion of the spinach and feta filling in the center of the layered filo. Fold in the sides and roll tightly to form a parcel. Repeat with remaining pastry and filling.

Bake the Filo Parcels
Preheat the oven to 375°F (190°C). Place the parcels on a baking sheet and brush the tops with olive oil. Bake for 20-25 minutes, until golden and crisp.

Serve
Serve the broiled salmon alongside the crispy filo parcels filled with spinach and feta.
