Prepare the Oysters
In a bowl, soak the shucked oysters in buttermilk for at least 30 minutes.

Prepare the Coating
In a shallow dish, mix together the flour, cornmeal, salt, black pepper, and cayenne pepper.

Heat the Oil
In a large, deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Oysters
Remove oysters from buttermilk and let excess drip off. Dredge each oyster in the flour mixture, ensuring they are well coated.

Fry the Oysters
Carefully place the coated oysters into the hot oil, frying in batches to avoid overcrowding. Fry for about 2-3 minutes or until golden brown.

Drain and Serve
Remove the fried oysters and drain on paper towels. Toss them in buffalo sauce before serving.

Serve the fried oysters topped with crumbled bleu cheese and chopped celery.
