Fried Oysters

Prepare the oysters

Shuck the oysters and place them in a bowl with buttermilk. Let them soak for 15 minutes.

Bread the oysters

In a shallow dish, mix flour, cornmeal, salt, and pepper. Remove oysters from buttermilk, coat them in the flour mixture, and set aside.

Fry the oysters

Heat oil in a deep skillet over medium-high heat. Fry the oysters in batches until golden brown, about 2-3 minutes per side. Drain on paper towels.

Prepare the potatoes

Wash and slice the potatoes thinly using a mandoline or sharp knife.

Fry the chips

Heat oil in a deep fryer or deep skillet to 350°F (175°C). Fry the potato slices in batches until golden and crispy. Drain on paper towels and sprinkle with salt.

In a bowl, combine corn, flour, baking powder, egg, milk, and salt. Mix until just combined.

Heat oil in a skillet over medium heat. Drop spoonfuls of batter into the oil and fry until golden brown on both sides, about 3-4 minutes. Drain on paper towels.
