Prepare the Chimichurri Sauce

In a food processor, combine parsley, cilantro, garlic, red pepper flakes, salt, and black pepper. Pulse to chop the herbs finely. Slowly drizzle in olive oil and vinegar while processing until well mixed. Set aside.

Roast the Fingerling Potatoes

Preheat the oven to 425°F (220°C). Toss fingerling potatoes with 2 tablespoons of olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes, until golden brown and tender.

Grill the Asparagus

Toss asparagus with 1 tablespoon of olive oil, salt, and pepper. Grill over medium-high heat for about 5-7 minutes, turning until tender and slightly charred.

Grill the Onions

Slice the red onion into thick rounds. Brush with balsamic vinegar and 1 tablespoon of olive oil. Grill for 5-7 minutes on each side until tender and caramelized.

Cook the NY Strip Steak

Season the NY Strip steaks with salt and pepper. Heat a grill or skillet over high heat. Cook for 4-5 minutes on each side for medium-rare, or until desired doneness. Let rest for a few minutes before slicing.

Plate the grilled NY Strip alongside roasted fingerling potatoes, grilled asparagus, and balsamic onions. Drizzle with chimichurri sauce before serving.
