1. Shucking Oysters
Carefully shuck the oysters using an oyster knife, ensuring to keep the liquor (the seawater) inside the shell.
2. Serving Raw Oysters
Place the shucked oysters on a bed of crushed ice on a serving platter. Serve with lemon wedges, Tabasco sauce, and mignonette sauce on the side.
3. Steaming Oysters
If you prefer steamed oysters, bring a pot of water to a boil and place a steamer basket over it. Add the oysters to the basket, cover, and steam for 5-7 minutes until they open. Discard any that remain closed.
4. Serving Steamed Oysters
Serve the steamed oysters immediately with lemon wedges and Tabasco sauce.
