    Prepare the Oven

    Preheat your oven to 375°F (190°C).

    Cook the Bacon

    In a skillet, cook the bacon over medium heat until crispy. Remove and crumble. Reserve some bacon fat in the skillet.

    Sauté the Aromatics

    To the skillet with bacon fat, add minced garlic and shallots. Sauté until fragrant, about 2 minutes.

    Add Crawfish and Crab

    Stir in the crawfish tails and lump crab meat, cooking for an additional 2-3 minutes.

    Add Spinach

    Add the chopped spinach and cook until wilted. Remove from heat.

    Mix the Filling

    In a bowl, combine the sautéed mixture with butter, lemon juice, Worcestershire sauce, Parmesan cheese, bread crumbs, salt, and pepper.

    Prepare Oysters

    Arrange the oysters on a baking sheet. Carefully shuck them and place a spoonful of the filling on top of each oyster.

    Bake the Oysters

    Sprinkle the reserved crumbled bacon on top of the filled oysters and bake in the preheated oven for 12-15 minutes, or until golden brown.

    Serve

    Remove from the oven and serve immediately, garnished with additional lemon wedges if desired.
