Preparation
1. Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch thick.
2. Soak the Potatoes
Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.
3. Heat the Oil
Heat the vegetable oil in a deep fryer or a large pot over medium-high heat until it reaches 350°F (175°C).
4. Fry the Potatoes
Drain and pat the soaked potatoes dry with paper towels. Fry the potatoes in batches for about 4-5 minutes or until golden brown and crispy. Remove them and drain on paper towels.
5. Season the Fries
While the fries are still hot, drizzle with truffle oil, sprinkle with salt, black pepper, and grated Parmesan cheese. Toss gently to coat evenly.
6. Garnish
Sprinkle the fries with freshly chopped parsley and serve immediately.
