Preparation Steps
Prep the Squash
Preheat your oven to 400°F (200°C). Cut the honeynut squash in half lengthwise and scoop out the seeds.
Season the Squash
In a small bowl, mix together olive oil, curry powder, grated ginger, salt, and black pepper. Rub this mixture all over the inside of the squash halves.
Roast the Squash
Place the squash halves cut-side down on a baking sheet lined with parchment paper. Roast in the preheated oven for about 25-30 minutes until the flesh is tender and caramelized.
Prepare the Tomato Mixture
While the squash is roasting, dice the tomatoes and set aside.
Combine and Serve
Once the squash is done, remove it from the oven and flip the halves cut-side up. Fill each half with the diced tomatoes, sprinkle with fresh cilantro, and serve warm.
