Fried Free Range Chicken Sliders

Preparation

    Brining the Chicken

    In a large bowl, combine salt, brown sugar, and water to create the brine. Stir until dissolved. Submerge the chicken thighs in the brine and refrigerate for at least 2 hours.

    Making Onion Gastrique Aioli

    In a saucepan, combine chopped red onion, apple cider vinegar, and garlic. Simmer until the mixture reduces and thickens. Allow to cool, then mix with mayonnaise to create the aioli. Season with salt and black pepper to taste.

    Frying the Chicken

    Remove chicken from brine, pat dry, and season with black pepper. Heat vegetable oil in a deep skillet over medium heat. Fry chicken thighs for about 6-8 minutes on each side, or until golden brown and cooked through. Drain on paper towels.

    Assembling the Sliders

    Slice brioche buns in half. Spread pineapple jam on the bottom half, add a piece of fried chicken, drizzle with hot honey, add frisée lettuce, and top with onion gastrique aioli. Place the top half of the bun on and serve.
