    Prepare the Brussels Sprouts

    Preheat the oven to 425°F (220°C). Trim the ends of the Brussels sprouts and cut them in half. In a bowl, toss the Brussels sprouts with olive oil, salt, and black pepper until well coated.

    Roast the Brussels Sprouts

    Spread the Brussels sprouts on a baking sheet in a single layer. Roast in the preheated oven for 20-25 minutes, stirring halfway through, until they are crispy and golden brown.

    Make the Pistachio Crumble

    While the Brussels sprouts are roasting, place chopped pistachios on a baking sheet and toast in the oven for about 5-7 minutes, or until fragrant. Let cool, then crush slightly if desired.

    Prepare the Onion Gastrique Aioli

    In a small saucepan, combine minced garlic, honey, and red wine vinegar. Cook over medium heat until slightly thickened. Remove from heat and mix with mayonnaise and lemon juice. Set aside.

    Make the Green Goddess Dressing

    In a blender, combine fresh herbs with a little olive oil and blend until smooth. Add salt and pepper to taste.

    Plate the crispy Brussels sprouts and drizzle with the onion gastrique aioli. Top with the toasted pistachio crumble and serve with the green goddess dressing on the side.
