Shrimp and Borscht

Preparation

    Prepare the Borscht

    In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sauté until translucent.

    Cook the Vegetables

    Add diced potatoes and beets to the pot. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for about 25 minutes or until vegetables are tender.

    Blend the Borscht

    Using an immersion blender, blend the borscht until smooth. Season with salt and black pepper to taste.

    Char the Shrimp

    While the borscht simmers, preheat a grill or grill pan over medium-high heat. Toss the shrimp with 2 tablespoons of olive oil, salt, and pepper.

    Grill the Shrimp

    Grill the shrimp for 2-3 minutes on each side until they are charred and opaque. Squeeze half of the grilled lemon over the shrimp.

    Prepare Chive Creme Fraiche

    In a bowl, mix the sour cream with chopped chives, a pinch of salt, and a squeeze of lemon juice.

    Serve

    Ladle the borscht into bowls, top with charred shrimp, a dollop of chive crème fraîche, and garnish with additional chives and lemon wedges.
