Prepare the Chicken
Preheat the oven to 375°F (190°C). Place each chicken breast between two sheets of plastic wrap and gently pound to about 1/2 inch thick.

Stuff the Chicken
Lay a slice of ham and a slice of Swiss cheese on each flattened chicken breast. Fold the chicken over to enclose the filling and secure with toothpicks if necessary.

Bread the Chicken
Set up a breading station. Place flour in one shallow dish, beaten eggs in a second, and breadcrumbs in a third. Season the flour with salt and pepper. Dredge each stuffed chicken breast in flour, dip in the egg, then coat with breadcrumbs.

Cook the Chicken
Heat olive oil in a large skillet over medium heat. Add the breaded chicken and cook until golden brown, about 4-5 minutes per side. Transfer to a baking dish.

Bake
Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (75°C).

Remove toothpicks and serve hot, drizzled with maple Dijon sauce if desired.
