Preparing the Fish

    Preheat your grill to medium-high heat. Brush the Opakapaka fillets with olive oil, and season with salt and black pepper. Grill the fillets for about 4-5 minutes on each side, or until the fish flakes easily with a fork.

Making the Sauces

    Asian Sweet Chili Sauce

    In a bowl, mix sweet chili sauce, soy sauce, lime juice, minced garlic, and grated ginger. Set aside.

    Cilantro Sauce

    In a blender or food processor, combine chopped cilantro, Greek yogurt (or sour cream), and lime juice. Blend until smooth.

Preparing the Salsa

    Pineapple Salsa

    In a bowl, combine diced pineapple, red bell pepper, chopped cilantro, and lime juice. Mix well and let it sit for a few minutes to meld the flavors.

    On a serving plate, place the grilled Opakapaka fillet, top it with Asian sweet chili sauce, add a generous scoop of pineapple salsa, and drizzle with cilantro sauce. Serve with rice or French fries, tossed salad, and corn.
