1. Prepare the Mahi Mahi
Preheat the grill to medium-high heat. Brush the Mahi Mahi fillets with olive oil and season with salt and black pepper.
2. Grill the Fish
Place the fillets on the grill and cook for about 4-5 minutes on each side, or until the fish is opaque and easily flakes with a fork.
3. Make the Lemon Butter Caper Sauce
In a saucepan, melt the butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Stir in the capers and lemon juice, and simmer for another 2-3 minutes. Remove from heat and stir in chopped parsley.
4. Assemble the Sandwich
Place a grilled Mahi Mahi fillet on the bottom half of each bun. Top with lettuce, tomato slices, and a generous drizzle of the lemon butter caper sauce. Cover with the top half of the bun.
5. Serve
