Preparing the Snapper

    Grill the Snapper

    Preheat the grill to medium-high heat. Brush the Opakapaka fillets with olive oil and season with salt and black pepper. Grill the fillets for about 4-5 minutes on each side or until cooked through and flaky.

Making Pineapple Salsa

    Combine Ingredients

    In a bowl, combine diced pineapple, red onion, chopped cilantro, lime juice, and salt. Mix well and set aside.

Assembling the Sandwich

    Build the Sandwich

    On the bottom half of each burger bun, place a lettuce leaf, followed by the grilled snapper. Drizzle the Asian sweet chili sauce over the fish, then top with pineapple salsa, sliced tomato, and onion. Place the top half of the bun on each sandwich.

    Serve the Opakapaka sandwiches with a side of french fries.
