Garlic Butter Sauce

Preparation

    Prep the Calamari

    Rinse the calamari steak under cold water and pat dry. Cut into rings or strips and season with salt, black pepper, and lemon juice. Set aside to marinate for 15 minutes.

    Prepare the Batter

    In a shallow bowl, combine the flour, garlic powder, paprika, and a pinch of salt. In another bowl, beat the eggs. In a third bowl, place the panko breadcrumbs.

Cooking

    Fry the Calamari

    In a large skillet, heat the olive oil over medium-high heat. Dredge each piece of marinated calamari in the flour mixture, then dip in the beaten eggs, and finally coat with panko breadcrumbs. Fry in batches for about 2-3 minutes or until golden and crispy. Remove and drain on paper towels.

    Make the Garlic Butter Sauce

    In a small saucepan, melt the butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Stir in parsley and lemon zest.

Serving

    Plate the fried calamari and drizzle with the garlic butter sauce. Serve immediately with lemon wedges on the side.
