    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch thick, to resemble fries.

    Place the cut potatoes in a large bowl of cold water and let them soak for at least 30 minutes. This helps remove excess starch and results in crispier fries.

    Dry the Potatoes

    After soaking, drain the potatoes and pat them dry with paper towels to remove excess moisture.

    Heat the Oil

    In a large deep pot or fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to check the temperature.
