Preparing the Tartar Sauce

    Make the Tartar Sauce

    In a bowl, combine mayonnaise, chopped dill pickles, lemon juice, capers, and dijon mustard. Mix well and refrigerate until ready to serve.

    Cut and Fry the Potatoes

    Peel and cut the potatoes into fries. Rinse and dry them thoroughly. Heat oil in a deep fryer or heavy pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels. Season with salt to taste.

    Prepare the Fish

    In a mixing bowl, whisk together flour, cornstarch, baking powder, salt, and black pepper. Gradually add cold sparkling water until you reach a smooth batter consistency. Dip each fish fillet into the batter, allowing excess to drip off.

    In the same oil used for the fries, heat to 350°F (175°C). Fry the battered fish in batches for about 4-5 minutes or until golden brown and cooked through. Remove and drain on paper towels.
