Make the Tartar Sauce
In a bowl, combine mayonnaise, chopped dill pickles, lemon juice, capers, and dijon mustard. Mix well and refrigerate until ready to serve.

Prepare the Fish
In a mixing bowl, whisk together flour, cornstarch, baking powder, salt, and black pepper. Gradually add cold sparkling water until you reach a smooth batter consistency. Dip each fish fillet into the batter, allowing excess to drip off.

Fry the Fish
In the same oil used for the fries, heat to 350°F (175°C). Fry the battered fish in batches for about 4-5 minutes or until golden brown and cooked through. Remove and drain on paper towels.

Serve the fried fish alongside the crispy fries and a generous dollop of tartar sauce.
