    Prepare the Marinade

    In a blender, combine the garlic, olive oil, oregano, cumin, salt, black pepper, and lime juice. Blend until smooth to create a marinade.

    Marinate the Pork

    Make incisions all over the pork shoulder to allow the marinade to penetrate. Rub the marinade thoroughly over the pork, ensuring it gets into the incisions. Cover and refrigerate for at least 12 hours, preferably overnight.

    Preheat the Oven

    Preheat your oven to 300°F (150°C).

    Prepare for Roasting

    Place the marinated pork shoulder in a roasting pan. Slice the onion and scatter it around the pork.

    Roast the Pork

    Cover the roasting pan with aluminum foil and roast in the preheated oven for about 4 hours. Remove the foil in the last hour to allow the skin to crisp up.

    Check for Doneness

    The pork is done when it reaches an internal temperature of 190°F (88°C) and is tender. Let it rest for at least 30 minutes before slicing.
