1. Prepare the Marinade

In a bowl, mix together minced garlic, olive oil, orange juice, lime juice, cumin, paprika, salt, and black pepper to create a marinade.

2. Marinate the Pork

Place the pork shoulder in a large resealable bag or dish and pour the marinade over it. Make sure the pork is well coated. Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight.

3. Preheat the Oven

Preheat your oven to 150°C (300°F).

4. Roast the Pork

Place the marinated pork shoulder in a roasting pan. Add bay leaves around the pork and cover the pan with aluminum foil. Roast in the preheated oven for about 3 hours, or until the pork is tender.

5. Finish and Serve

Remove the foil and increase the oven temperature to 200°C (400°F). Roast for an additional 30 minutes to brown the top. Let rest for 10 minutes before slicing and serving.
