    Prepare the Ingredients

    Gather all the ingredients and prepare them by chopping the bell peppers, onion, and tomato. Mince the garlic.

    Cook the Chicken and Chorizo

    In a large paella pan or a wide skillet, heat olive oil over medium heat. Add the chicken thighs and chorizo, cooking until the chicken is browned on all sides. Remove and set aside.

    Sauté the Vegetables

    In the same pan, add the diced onion, bell peppers, and minced garlic. Sauté until the onion is translucent.

    Add Rice and Spices

    Stir in the Bomba rice, paprika, salt, and black pepper. Cook for 1-2 minutes until the rice is lightly toasted.

    Add Liquids and Saffron

    Pour in the chicken broth and add the saffron threads. Bring to a boil.

    Combine Everything

    Return the chicken and chorizo to the pan. Add the diced tomato and frozen peas. Stir gently to combine.

    Cook the Paella

    Reduce heat to low, cover the pan, and let it simmer for about 20-25 minutes, or until the rice has absorbed the liquid and is tender.

    Add Shrimp

    In the last 5 minutes of cooking, add the shrimp on top of the mixture, covering the pan again until the shrimp are pink and cooked through.

    Serve

    Remove from heat and let it sit for a few minutes. Fluff the rice with a fork and serve hot.
