    Sear the Pork

    In a large pot, heat the olive oil over medium-high heat. Add the cubed pork shoulder and sear until browned on all sides, about 5-7 minutes. Remove the pork and set aside.

    Sauté the Vegetables

    In the same pot, add the chopped onion, garlic, and bell pepper. Sauté until the onion is translucent, about 3-4 minutes.

    Add the Tomatoes and Spices

    Stir in the diced tomatoes, chicken broth, cumin, oregano, bay leaves, salt, and black pepper. Bring to a simmer.

    Combine and Cook

    Return the seared pork to the pot. Cover and let it simmer on low heat for about 1.5 to 2 hours, or until the pork is tender and flavors are well combined.

    Serve

    Remove bay leaves before serving. Serve hot with rice or tortillas.
