Prepare the Roast
Season the beef chuck roast with salt and black pepper on all sides.

Sear the Meat
In a large skillet, heat olive oil over medium-high heat. Sear the roast for about 3-4 minutes on each side until browned. Transfer to a slow cooker.

Combine Ingredients
Transfer the sautéed vegetables to the slow cooker with the roast. Pour in beef broth, Worcestershire sauce, and add bay leaves and thyme.

Slow Cook
Cover and cook on low for 8 hours or until the meat is tender and shreds easily.

Make Gravy
Once cooked, remove the roast and vegetables. Skim excess fat from the liquid in the slow cooker. In a saucepan, combine 1 cup of the liquid with 2 tablespoons of cornstarch mixed with water to thicken into gravy.
