Prepare the Peppers
Preheat your oven to 375°F (190°C). Cut the tops off the Hungarian Banana Peppers and remove the seeds carefully.

Cook the Filling
In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until onions are translucent. Add Italian sausage and cook until browned. Stir in breadcrumbs, Gorgonzola cheese, chopped parsley, salt, black pepper, and red pepper flakes. Mix until well combined.

Stuff the Peppers
Fill each pepper with the sausage and breadcrumb mixture, packing it tightly.

Bake the Peppers
Place the stuffed peppers on a baking dish. Bake in the preheated oven for 25-30 minutes, or until the peppers are tender and the filling is golden.

Serve
Remove from the oven and let cool for a few minutes. Serve warm.
