Prepare the Pickled Onions
In a bowl, combine the sliced red onion with apple cider vinegar, water, sugar, and salt. Mix well and let sit for at least 30 minutes.

Make the Pulled Pork
In a slow cooker, combine the pork shoulder, barbecue sauce, onion powder, garlic powder, smoked paprika, cayenne pepper, salt, and black pepper. Pour apple cider vinegar over the top. Cook on low for 8-10 hours until the pork is tender and easily shredded.

Prepare the Coleslaw
In a large bowl, mix together the shredded cabbage, grated carrot, mayonnaise, apple cider vinegar, sugar, salt, and black pepper until well combined. Refrigerate until ready to serve.

Assemble the Sandwiches
Once the pork is done, shred it with two forks and mix it with the barbecue sauce in the slow cooker. Toast the sandwich buns if desired. Assemble the sandwiches by placing pulled pork on the bottom half of each bun, topping with coleslaw and pickled onions, then placing the other half of the bun on top.
