Prepare the Dough
In a large mixing bowl, combine warm water, yeast, and sugar. Let it sit for about 5 minutes until frothy. Add in salt and gradually add the flour, mixing until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 5 minutes until smooth. Place in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour, or until doubled in size.

Shape the Pretzel Rods
Preheat the oven to 425°F (220°C). Punch down the risen dough and divide it into 12 equal pieces. Roll each piece into a long rope (about 12 inches long) and shape them into pretzel rods.

Boil and Bake
In a large pot, bring 10 cups of water to a boil and add the baking soda. Boil each pretzel rod for 30 seconds, then remove with a slotted spoon. Place on a baking sheet lined with parchment paper, brush with beaten egg, and sprinkle with coarse sea salt. Bake for 12-15 minutes until golden brown.
