1. Prepare the Lamb
Preheat your oven to 300°F (150°C). Season the lamb shoulder with salt and black pepper. Place it in a roasting pan and add garlic cloves. Drizzle with olive oil and cover with foil. Roast in the oven for 4 hours until tender.
2. Make the Spearmint Aioli
In a blender, combine fresh spearmint leaves, mayonnaise, lemon juice, salt, and black pepper. Blend until smooth. Adjust seasoning to taste and set aside.
3. Shave the Lamb
Once the lamb is cooked, remove it from the oven and let it rest for 15 minutes. Use a sharp knife to shave the lamb thinly.
4. Assemble the Sandwich
Heat a griddle or skillet over medium heat. Place two slices of sourdough bread on the griddle. Top each with shaved lamb and a slice of Havarti cheese. Place another slice of sourdough bread on top and grill until golden brown on both sides and the cheese is melted.
5. Serve
Remove the sandwiches from the griddle, slice in half, and serve immediately with a dollop of spearmint aioli on the side.
