Preparing the Fries
Start by washing and peeling the Russet potatoes. Cut them into thick strips to make fries.

Frying the Fries
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Carefully add the potato strips in batches and fry until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels. Season with salt and pepper.

Heating the Gravy
In a saucepan, heat the beef or chicken gravy over medium heat until hot and simmering.

Assembling the Poutine
On a plate or in a bowl, place a generous serving of hot fries. Top with cheese curds and pour the hot gravy over the top. Add optional toppings if desired.

Serve immediately while hot for the best texture and flavor.
