    Prepare the Onions

    Peel the onions and slice them into 1/2-inch thick rings. Separate the rings and set aside.

    Make the Coating

    In a large bowl, whisk together the flour, cornstarch, baking powder, paprika, garlic powder, salt, and black pepper. In another bowl, pour the buttermilk.

    Coat the Onion Rings

    Dip each onion ring first into the buttermilk, then dredge it in the flour mixture, ensuring it's evenly coated. Finally, coat with panko breadcrumbs for extra crunch.

    Fry the Onion Rings

    In a deep skillet or fryer, heat the vegetable oil over medium-high heat. Fry the onion rings in batches until golden brown, about 3-4 minutes. Remove and drain on paper towels.

    Prepare the Boom Boom Sauce

    In a small bowl, combine mayonnaise, sriracha, honey, and lemon juice. Mix well until smooth.
